This year, we are thrilled to introduce a new component to our Culinary Adventures program: the Chef-for-a-Day series. These events will enable you to truly experience the craft of winemakers, cheesemakers and foragers by walking a day in their shoes and creating your own artisan products. They promise to be exhilarating and unique experiences, each in its own right. This is likely the best way to get an adventurous taste of the bounty and rich beauty that is the culinary side of the Pacific Northwest.

Join chef Roy for a day of foraging in the nearby mountains for exotic local products such as fiddlehead ferns, miner's lettuce, and the famous stinging nettles of the great Pacific Northwest. The daylong excursion includes a gourmet picnic lunch paired with beautiful local wines.
Chef Roy and friend Armandino Batali, of Seattle's famed Salumi, bring you an evening celebrating the tastes of Tuscany. This delectable dinner features whole roast milk-fed porchetta pig, artisan Culatello prosciutto and specialty parmesan preparations, all paired with rare southern Italian wines. Join us for an evening of culinary poetry as we celebrate some of the finest ingredients of the Northwest – through unforgettable dishes and award-winning local wines. We're delighted to collaborate with Greg Lill of DeLille Cellars to showcase some of the Woodinville winery’s outstanding selections. This small, family-run winery has made a name for itself following traditional methods and Bordeaux-style standards. Hand-selecting only the best berry clusters to be fermented and aged in 100% French oak barrels has led DeLille to earn such esteemed honors as one of Wine Spectator’s "Top 100 Wines of the World" (for its 2004 D2) and Wine Enthusiast’s "Top Rated 100 Wines of 2007" (for the 2005 Chaleur Estate Blanc).
Venture to the esteemed local dairy Estrella Family Creamery in Montesano, Wash., to meet Kelli Estrella and her family for an exclusive lesson in the finer points of cheesemaking. Your lesson will be followed by the treasured opportunity to taste the season’s best cheeses in Kelli’s farmstead tasting room. Return home with your very own cheese and great memories of a personal day on the farm.
Alan Shoup is one of the most celebrated pioneers of the Washington state wine industry, for his reflections of a style called "garagistes." This 1990s movement of innovative winemakers in Bordeaux emerged in reaction to the more traditional styles of the region, but whose wines have regularly received top marks from Robert Parker.
